Overview

The Maison du Gruyère is located in Pringy, a village in the canton of Fribourg at the foot of the medieval town of Gruyères. Opened in 1969 and fully renovated in 2010, it is dedicated to Gruyère AOP, a hard cheese produced in the region for more than 900 years.

The building houses a working dairy where cheesemakers produce wheels using traditional methods. Large picture windows let you follow their work. The site also includes an interactive museum area, a shop and a restaurant.

What to see and do

From the glass-walled gallery, you can follow the production process : the cheesemakers heat the milk in large copper vats, add rennet, cut and stir the curds, then press them into round moulds. A single wheel requires around 400 litres of milk. Panels and a multilingual audio guide explain each step.

Through videos and multimedia installations, the museum trail covers the origins of the cheese, pastoral traditions, life on the Alpine pastures and how techniques have evolved. One section details the criteria of the AOP designation. In a reconstructed maturing cellar, you learn that the wheels age for at least 5 months, sometimes 18 months or more.

In the shop, you can taste the different maturation levels for free (mild, mi-salé, salé, vieux, surchoix) along with other Fribourg specialities. The restaurant serves fondues, raclettes and cheese croûtes, with views of the Pre-Alps.
